# What You Need:

→ Cauliflower

01 - 2 large heads cauliflower

→ Spice Mix

02 - 3 tbsp olive oil
03 - 1 ½ tsp ground cumin
04 - 1 ½ tsp smoked paprika
05 - 1 tsp ground coriander
06 - ½ tsp turmeric
07 - ½ tsp garlic powder
08 - ½ tsp onion powder
09 - ½ tsp sea salt
10 - ¼ tsp freshly ground black pepper
11 - Pinch cayenne pepper

→ Garnish

12 - 2 tbsp chopped fresh parsley or cilantro
13 - 1 lemon cut into wedges

# How-To:

01 - Preheat oven to 425°F. Line large baking sheet with parchment paper.
02 - Remove leaves and trim stem end of each cauliflower, keeping core intact. Slice each cauliflower vertically into 1-inch-thick steaks, yielding 2-3 steaks per head. Reserve remaining florets for another use.
03 - In small bowl, whisk together olive oil, cumin, smoked paprika, coriander, turmeric, garlic powder, onion powder, salt, black pepper, and cayenne until well combined.
04 - Arrange cauliflower steaks on prepared baking sheet. Brush both sides generously with spice oil mixture.
05 - Roast for 15 minutes. Carefully flip each steak, brush with remaining oil mixture, and continue roasting for 15 minutes until golden and tender.
06 - Transfer to serving platter. Garnish with fresh herbs and serve with lemon wedges.

# Expert Tips:

01 -
  • The spice blend creates this incredible crust that makes you forget youre eating cauliflower
  • Its the kind of dish that makes plant-based eating feel indulgent rather than like a compromise
02 -
  • Some florets will inevitably fall off while slicing. Those get crispy and delicious on their own. Think of them as the cooks treat.
  • Dont crowd the baking sheet or the steaks will steam instead of roast. Work in batches if necessary.
03 -
  • Let the spice mixture sit for 10 minutes before brushing. The flavors meld together and taste much more complex.
  • If you want extra crispy edges, finish under the broiler for 2-3 minutes. Watch closely so they dont burn.
