07 - ¼ cup heavy cream
08 - ¼ cup unsweetened cocoa powder
09 - ½ cup powdered erythritol or monk fruit sweetener
10 - ⅛ teaspoon xanthan gum
11 - ¼ teaspoon instant espresso powder
12 - ½ teaspoon pure vanilla extract

→ Whipped Cream Layer

13 - 1 cup heavy whipping cream
14 - 2 tablespoons powdered erythritol or sweetener of choice
15 - ½ teaspoon vanilla extract

# How-To:

01 - Preheat oven to 325°F. In a bowl, combine almond flour, cocoa powder, sweetener, melted butter, and salt. Stir until crumbly. Spread onto a parchment-lined baking sheet and bake for 8–10 minutes, stirring halfway. Let cool completely, then break into fine crumbs.
02 - In a saucepan, whisk together almond milk, heavy cream, cocoa powder, sweetener, xanthan gum, and espresso powder if using. Place over medium heat and stir constantly until mixture thickens, about 3–4 minutes. Remove from heat and stir in vanilla. Let cool to room temperature, then refrigerate until chilled and thickened for at least 1 hour.
03 - Whip heavy cream, sweetener, and vanilla using an electric mixer until stiff peaks form.
04 - In a glass dish or individual jars, layer half the chocolate crumble at the base. Spread half the pudding over the crumbs, then half the whipped cream. Repeat layers, finishing with the remaining crumble on top to resemble dirt. Chill for at least 1 hour before serving.
