01 - Bring a large saucepan of salted water to a boil. Add the carrots and cook for 5 to 7 minutes until just tender. Drain thoroughly using a strainer.
02 - Melt unsalted butter in a skillet over medium heat. Incorporate honey, brown sugar (if using), salt, and black pepper, stirring until the mixture becomes unified.
03 - Add the drained carrots to the skillet. Toss to coat evenly and cook for a further 5 to 7 minutes, stirring frequently, until carrots are glossy and caramelized.
04 - Transfer glazed carrots to a serving dish. Garnish with chopped fresh parsley if desired. Serve warm.
